This past week I made an Athenos feta potato salad, a pasta salad and green salad! In fact, that is pretty much the only food I have made this week. It has been over 100 degrees for days and we're pretty much been eating out for the past few days. Luckily, it is easy to make a quick lunch salad using feta. Feta does have quite a presence in salads so you need strong ingredients to stand up to it. I've been finding that pickle-y ingredients like capers, olives or pickled green beans/beets work extremely well, if the ingredients are too mild, they get lost. Smoked or spicy flavors pair well with the feta.
