It's the end of the challenge

One more recipe will post on Coconut & Lime tomorrow but Sunday is August and that means the end of my Athenos' Change for the Feta challenge is here. Honestly, I've nearly forgotten what it was like to go a day without eating feta! Cheddar almost tastes strange to me now, although I still like it. I did feel healthy eating so many salads. Normally I am not a huge salad eater, especially before August when tomato season really hits Baltimore but it was nice to eat so many vegetables and have an excuse to eat so much cheese!

Feta Days

As the month of feta winds down I am pleased to report that it wasn't as difficult to eat a salad with feta every day as I feared it might be. I did go through those huge bags of romaine from Costco at an alarming rate but honestly, it was easy to plan meals when you knew one was salad. And I got to try more varieties of Athenos feta that I even knew existed. I am looking forward to trying feta in non-salad recipes though.

Zuke Chips + Feta

I came across this salad on We Are Not Martha and love the idea! I have never breaded and baked zucchini before but now I am wondering why I haven't! I love zucchini and I think it would be great crispy. The salty Athenos feta would be a great contrast with the more subtle zucchini.

Watermelon-Feta Salad

How yummy is this watermelon-feta salad from Two Peas and Their Pod? I have been dying to try a fruit + feta salad but I haven't found a good watermelon yet. Perhaps this weekend? Or do you think peaches would be good with Athenos feta? We have some awesome local peaches.

I don't eat enough quinoa myself, my husband is not a fan and since we are a family of two, I don't make a lot of meals just for myself. But quinoa is a complete protien and I can only imagine how filling this salad is!

The Ins and Outs of Daily Salad Making

I've been trying to eat a salad (with Athenos feta!) every day but I have to say it was a little rough this week. I didn't feel well Thursday and ended up just eating saltines and a turkey sandwich. I missed my feta! Luckily I am feeling better and have plans for exciting salads this coming week. I still need to recreate a really yummy one I had on Tuesday that I wanted to post but couldn't get a good shot of. Picture taking is so important when food blogging! It is rare not to be able to get a good shot in the summer because of all the natural light/long days but we ate so late, it was dark before I sat down to eat. We normally eat late(ish) any way but now that Matt's been working 8-4:30 (instead of the usual 7-3:30) by the time he comes home it is after five or even later if he has to run an errand and it really pushes dinner making back. I don't know how people who work until 6 or 7 ever eat a real dinner. Since I (or he) make everything from scratch, dinner takes a fair amount of time to make. Luckily, salads are pretty quick and they have been a real time saver this month!

Quick Picture Post!


Sorry about the blurry iPhone shot! Just wanted to share one of my salads from this week. Lots of radishes,  Athenos feta, a homemade dressing with lots of shallots and some butter lettuce. I really stocked up on lettuce at Costco this weekend! I was happy to see so much "local" produce there, pretty much everything was from NJ, which while it isn't as great as it would be to get it from MD, NJ is only a state away. I hate when supermarket produce comes from FL or  CA  when it is in-season here and I can't always get to the farmers markets. Getting up early on Sunday and driving all the way downtown is hard especially in May-June-early July when there isn't a whole lot in season (at once anyway) yet. My mom went this past weekend though and said that peaches were in so I might pry myself out of bed and head down this weekend. I need to refresh my salad ingredient stash. I did make a salad with homemade pickled beets that was really good this week, I couldn't get a good picture of it (we ate too late and it was dark out) but I am going to try and reproduce it so I can post the recipe on C&L.

Feta Varieties

I've been working my way through the various flavors of feta that Athenos produces. My thoughts so far:

Traditional (My favorite. It also comes in big tubs which is handy)
Basil & Tomato (Haven't tried yet)
Garlic & Herb (Tasty)
Lemon Garlic & Oregano (Lemon-y. Good in a salad when I didn't want to fuss much with dressings)
Roasted Red Pepper & Garlic (Not my favorite but I don't generally like red peppers/red pepper flavored things)
Mild (Haven't tried yet but think it will be good in salad without strongly favored ingredients)
Black Peppercorn (Tasty, I like black pepper in my salads anyway)
Reduced-Fat Traditional (Haven't tried it yet)
Reduced-Fat Tomato & Basil (I haven't been able to find this one)
Fat-Free Original (Not big on fat-free cheese so I haven't tried it yet)
Feta Packed in Brine (Love this, reminds me of the imported Greek feta I've bought in the past)

Salad Mania

This past week I made an Athenos feta potato salad, a pasta salad and green salad! In fact, that is pretty much the only food I have made this week. It has been over 100 degrees for days and we're pretty much been eating out for the past few days. Luckily, it is easy to make a quick lunch salad using feta. Feta does have quite a presence in salads so you need strong ingredients to stand up to it. I've been finding that pickle-y ingredients like capers, olives or pickled green beans/beets work extremely well, if the ingredients are too mild, they get lost. Smoked or spicy flavors pair well with the feta.

Salad, salad, salad!

I have made green salads, pasta salads and potato salads this month. I enjoyed them all. The only problem I have had is that the feta crumble package is only 4 oz which is skimpy if more than one person is eating it and sort of hard to close if you don't eat all of it. I close the package very carefully but if there is even a tiny breach, the cheese dries out.  It is very tasty but keeping it fresh is more of  challenge than it should be. Frustrating when you are eating a feta salad every day for a whole month!

The first few days



I've had a few salads with feta so far and I  find that its salty-tart-strong flavor means that I generally use less cheese than I might with cheddar or even blue cheese. A little bit goes a long way! So not only is is lower in fat and calories, I am using less of it. So far I have only being using the original flavor but I am excited to try some of the other flavors. The black pepper one looks great!

Simple Lunch Salad



Today's lunch salad was a simple one: Boston lettuce, halved cherry tomatoes, original crumbled Athenos feta and a homemade vinaigrette made with red wine vinegar, olive oil, salt, pepper and a bit of the mustard I brought back from Belgium last year. The perfect easy lunch for a hot day!

Introduction

Recently I was approached by Athenos Feta to become a spokesblogger for their product for a one month experiment. The experiment is to switch out my usual cheese in a salad for feta. I do tend to put some sort of cheese in my salads because I don't use creamy dressings but I try not to over do it because I like my salads as healthy as possible. So I was interested to learn that feta is naturally 30% lower in fat and calories than cheddar.


Follow me for the next month when I eat a salad with feta every day! Look for salad recipes, giveaways, and my thoughts on all of the cheese eating. Don't worry, I will still post a new, original non-feta recipe every Monday, Wednesday and Friday  on Coconut & Lime. I will also be sharing updates about my feta challenge  here a few times a week throughout July.


Please look for contests every Friday on Coconut & Lime and some "bonus" recipes featuring feta in hopefully new and exciting salads. Follow along with my journey with feta on this blog. I will post pictures of my salads and thoughts about the experiment a few times a week.  I am excited by the challenge of coming up with new and interesting salads to make with feta cheese. I like feta but I can't say it is a cheese that I eat on a super regular basis. That is going to change this month! In fact, I eating some in a simple green salad as I type.
